WASHINGTON — The USDA has proposed changes to meat processing rules that would allow higher line speeds in certain poultry and pork plants.
The proposal applies to establishments operating under modern federal inspection systems.
Under the changes, eligible plants could run processing lines at speeds supported by their equipment and food safety performance.
Federal inspectors would remain on site and retain authority to slow or stop operations if inspection cannot be performed effectively. The USDA says the rule is intended to reduce regulatory barriers, increase processing efficiency, and help stabilize the food supply.
The proposal would also remove certain worker safety attestations that the agency says fall outside its authority.
The rule is not yet final.
