Eileen was born on December 4, 1937, at home in Ottawa Lake, Michigan to Walter and Edna (Harre) Fink. She graduated from Blissfield High School with the Class of 1956. Eileen later graduated from Capital University with a bachelor’s degree in nursing. On August 26, 1962, Eileen was united in marriage to Kenneth J. Mitchell in Ottawa Lake, MI. They were fortunate to share over 59 years together and raised 3 wonderful children. They were active in the community by volunteering at local 4-H and FFA events. She was an active member at Immanuel Lutheran Church where she sang in the choir. Eileen worked as a public health nurse for the Lenawee County Health Department before retiring.
Eileen took pride in her baking, and she will be remembered for her cinnamon rolls and peanut brittle. She was an amazing grandmother and great grandmother. Eileen enjoyed having movie nights with her grandchildren and always had plenty of their favorite snacks on hand to spoil them.
Eileen is survived by her children, Patty (Jim) Collins, Russ (Laura) Mitchell and David (Michele) Mitchell; grandchildren, Michaela, Sean, Mandy (Jeffrey), Tim, Tom (Miquela), Josh, Jobe, Holly, Katie, Dottie and Abbie; great-grandchildren, Vivian, Eleanor, Jonathan, Sophia, Titus, Orrin, Penelope, Kaladin, Elliott and one on the way, Rebecca Eileen. In addition to her husband, Ken, she was preceded in death by her parents, an infant daughter, Ann, and siblings, Wilbert Fink, Doris Fischer, Marvin Fink and Leroy Fink.
Funeral services will be held on Wednesday, March 11, 2026, at 11 AM at Wagley Funeral Home, Adrian, with Pastor Paul Herter officiating. Burial will be private at Oakwood Cemetery. Visitation will take place on Tuesday, March 10, 2026, from 4-7:00 p.m. at the funeral home and again Wednesday at 10 AM. until the start of the service.
In lieu of flowers, memorial contributions may be directed to Hospice of Lenawee or to Immanuel Lutheran Church, Palmyra.
